Pahtyana Moore’s Favourite Wassail

December 8, 2018

Pahtyana Moore

I tried a version of this at a Christmas party years ago and fell in love with the flavor instantly. I of course then adopted it into my collection of holiday drink recipes and have been making variations of it ever since. Over the years, living internationally, I’ve found this recipe can be easily adapted with various local flavors and spices that are available which makes it a keeper in my international cookbook.

Holiday Wassail:

  • 2 quarts/8 cups apple juice or apple cider
  • 1/2 quart/2 cups orange juice
  • 1/2 cup pineapple juice
  • 1 cup pineapple chunks
  • 4-6 orange slices, cut as circles
  • 12 whole cloves
  • 4 cinnamon sticks
  • 1 pinch ground ginger
  • 1 pinch ground allspice
  • 1 pinch ground nutmeg

In a crock-pot or a large pot over low heat, pour in apple juice/cider, orange juice, orange slices, pineapple juice and chunks. Add seasonings, add more or less to taste. Bring to a simmer & keep covered on low heat for at least 4 hours. If using a crock-pot, keep on low/simmer all day. Serve hot.
